In Room Coffee Program

Pistol & BURNES is a Canadian roasting company located in Delta British Columbia. We specialize in Farmer First Organic coffees. The purpose of this introduction is to sell you on the idea of using NIC/NAT natural for your in room coffee program.

Our farmer first in room coffee tastes unique because of the way Dr. Reynaldo from Aroma Nica in Nicaragua processes the cherries. First, he takes time to prepare the natural coffee by drying ripe cherries on the sun patio before hulling them.

The cherries are dried for two weeks under the sun, then they are hulled. This added effort produces a whiny finish in the cup. Pistol & BURNES then takes the time to roast the natural coffee first then we roast the water washed coffee separately to a different roast structure. After both roasts are finished we then post blend. This produces a great tasting in room coffee.

"This year my father, Reynaldo Fiallos, enjoyed preparing a very special lot of coffee for our friends at Pistol & Burnes. He reminisced of old times when his father, just as his grand father used to, prepared his famous “Reserva del Patron” ( The boss’ reserve)

The preparation of this coffee by The Fiallos coffee growers, goes back to the time of Luis Fiallos Padilla (my great-grandfather). The Family would reserve the coffee that was picked at its peak of ripeness, dry it in its fruit, to be milled and sorted later. It was prepared this way to consume throughout the year as the family’s special coffee reserve.

For this special preparation for our friends at Pistol & Burnes, we went back to our old tradition and a lot of La Reserva del Patron was prepared from catuai coffee trees on our plantations. This variety of Arabica, (which gives red and yellow cherries) does tremendously well at our altitudes of 1400 meters above sea level.
The process began with the meticulous picking of cherries at their perfect ripening point. Once picked, the cherries are spread on the cement patios and are constantly raked to ensure an even dry. It will usually take coffee cherries 10 sunny days to dry.
At this point the red cherries have turned black and the pulp around the bean dried. This dried pulp can then be removed in the hulling or milling process, leaving the green coffee beans to be sorted.
These beans are carefully selected by our team of young women, who will then pass on the coffee for you to enjoy."

What is Farmer First?

Pistol & BURNES purchase green coffee directly from the source of origin. We pay a fair price for the green that provides a profit. The profit realized is reinvested in the community either in capital equipment or social reform. Growers practice sustainable farming and processing methods.
